 The Best Classic Hummus



I have tried different hummus recipes since I was gifted a food processor about 3 years ago. But let me tell you that this is probably the best recipe I have made so far and there is a secret ingredient on this one that you cannot miss!

The recipe is from the talented Middle Eastern expert Yottam Ottolengui, and I am sure you would love to try it.

You can also make your own tahini at home using a powerful kitchen robot with toasted sesame seeds. It will cost you less as you can buy the seeds in bulk and store it in the fridge for several months.

In the Middle Easter and Mediterranean areas is used not only for hummus but also as a condiment in Greece, as a topping for shawarma or falafel in Israel,  in East Asia is added to the noodles and in other places, it is used in sauces for meats and vegetables.

Let's dig into the recipe and discover the secret, shall we?


What do you need?

✅ Kitchen robot or Blender
✅ Serving dish

Ingredients:

✔450g drained chickpeas already cooked
✔ Dried cumin
✔120-150g tahini
✔1 or 2 crushed garlic cloves
✔1/2 squeezed lemon or more
✔AOVE (Virgin Olive Oil)
✔1 pinch of salt and black pepper
✔2 Ice Cubes (our secret Ingredient)
✔2 ice cubes are going to add air

Method:

  1. Start draining the chickpeas and boil them in salted water with a little bit of cumin for about 10-15 minutes. We are going to use this water later on.
  2. Add the chickpeas, the tahini, the crushed garlic, the lemon juice, the olive oil, a bit of salt, the two ice cubes, and a bit of the cooking water into a powerful kitchen robot and start blending it all together.

  3. Check and blend again as much as you like until you'll find a smooth consistency.
  4. Try and adjust any ingredient you think may need, could be a bit of salt, more lemon, tahini, or olive oil.
  5. Serve into a nice bowl and add your favorite toppings. On my classic hummus, I normally add some smoked paprika and a bit of olive oil to give that shine that we all love to see on the final presentation.


Ideas for toppings:


Add a sprinkle of paprika and AOVE (Virgin Olive Oil).

Add finely chopped garlic and some lemon zest.
