Caramelized onion and baby tomatoes with Cambozola cheese-tart




All you need to make this fancy tart is a bit of patience to caramelize the onions until golden brown and super sweet.

I like the fact that you can use the cheese you prefer.  Would be great with goat cheese, blue cheese or camembert cheese. I would sugest to use a soft cheese with an intense flavour.

This is a recipe for sharing with family and friends or for a movie night instead of a pizza.

The key ingredient here is the caramelized onion, which is cooked at slow temperature adding a bit of water to reduce it and without the need of sugar at all.





What do you need:


1 Oven tray
A piece of oven proof paper
1 frying pan to caramelize the onions
1 chef knife 
1 chopping board

To make the recipe for 4:


1 puff pastry sheet already made
2 large onions
300g baby plum tomatoes cut in half
150g cambozola cheese sliced
1/2 cup of apple vinegar
1tsp dijon mustard

Method:

How to caramelise onions:

  • Start slicing the onions very thin and slowly brown them with a bit of olive oil and salt in a frying pan. 
  • When they start to become soft and golden add a bit of water and let it absorb, do this 2 or 3 times and you will start to see how gets very brown and it will become sweet by itself without adding any sugar. At the end add the mustard and the vinegar and let it cook until is caramelised.
  • This process can take about 15 - 20 minutes.

How to prepare the tart:

  • Set the oven at 200 ° C. 
  • Unroll the puff pastry and  place it into the oven tray.
  • Pinch the ends and prick the surface with a fork. 
  • Bake for about 10-12 min and remove from the oven. 
  • Now we add the onions and cover the top of the pastry.
  • Add the sliced ​​baby tomatoes on top and finish it with the slices of the cheese. 
  • Bake for 10 more min.



It can be served warm or cold, although I prefer this tart warm just about to take it out from the oven. Is when the pastry is more crispy.
