Spatchcock Chicken Satay
I really wanted to make this Indonesian chicken recipe from @simplyfoodbymandy which looks sooo tasty, following her steps to spatch a chicken which is quite easy and reduces the cooking times nearly by half!
This chicken it's simply delicious, tender in the middle, and with spicy and nutty flavors.
I accompanied it with some corn on the cob, sliced spring onions, and lime juices too
What do you need:
✅ 1 medium bowl
✅ Oven tray or roaster
✅ 1 chef knife and a chopping board
To make the recipe for 4:
✔ 1 whole spatched chicken (you can easily do it yourself with a good pair of scissors ✂️)
Marinate:
✔ 2 tbsp peanut butter
✔ 2 crushed garlic cloves
✔ 1 tbsp honey
✔ 3 tbsp soy sauce
✔ 1 tbsp olive oil or sesame oil
✔ 2 tbsp grated ginger
✔ 1 tbsp chili flakes
Method:
- Set your over at 210°C. Add all the ingredients of the marinade into a bowl and mix well.
- Spread it all over the spatch chicken and cover it with kitchen foil.
- Bake for about 40min.
- Remove the foil and continue to cook for another 15-20 until caramelized and crispy
Tips 👉 Serve with lime juice, freshly chopped spring onions, and sliced chili on top.
👉Acompaign with a bowl of basmati rice and corn on the hob
