 Stewed Vegetable Casserole


One of the recipes I've learned from a well-known Insta foodie Susana from @webosfritos that I couldn't recommend enough. It is a simple vegetable stew which you can do any time of the year as all you will need is seasonal vegies and some chopped onion and water to combine and make the dish come together.

The one pictured above was made at the beginning of October with green beans, onions, cherry tomatoes, carrots, and leeks but please use your imagination and play around with other vegetables like kale, broccoli, or Brussels sprouts which are in season now.

You will need:

✅ 1 26cm non-stick frying pan or saute pan 

✅ 1 chef knife and a chopping board


To make the recipe for 4:

✔A good bunch of green beans

1 sliced onion

1 garlic clove crushed

200g cherry tomatoes

2 carrots

1 leek

200g frozen peas

1/2 dried chili 

Salt and pepper

Olive oil

100ml white wine

200ml water


Method:

Wash thoroughly all the ingredients under the tap. Once dried peel the carrots, cut the ends of the green beans, and then cut all the vegetables in similar sizes.



Add oil into a pan and sauté the onion and the garlic for about 2 minutes. 

Now add the rest of the vegetables, season well with salt and black pepper, and cook. 


Add the wine and after 3 minutes add the water. Let it cook with the lid on for about 15 or 20 minutes until all the vegetables are at your taste or more tender.



Tips:

👉Cut very fine the chili and add it at the end of the cooking time.

👉Add some bacon cubes or chorizo and it will give great flavors to the dish!

👉Enjoy with a slice of bread!
