 Peri-Peri chicken



One of our favorite recipes at home is Peri-Peri chicken. We tried it for the first time here in London where we live. 

The origins of the recipe are from Portugal, in the Algarve region. The chili called Bird's Eye is originally from Mozambique, where they grow it, it is commonly known as Peri Peri, which has amazing properties like enhancing your mood and the endorphins of your body. The Portuguese traders took it to Europe and here we have a great recipe.

Seriously, once you try this recipe at home you will do it again and again!!!

The recipe is quite simple, get some chicken, spices, and lemon. Your oven will do the rest!

What do you need:


✅1 food processor or hand blender
✅1 oven tray
✅1 bowl 
✅1 paring knife
✅1 lemon squeezer (is not mandatory but helps a lot yet it is so useful in your kitchen)

Ingredients for 4:


✔6 chicken legs 
✔6 chicken thighs 

For the marinade:

3 Garlic cloves
1 bunch of Parsley
1 bunch of Basil
1 Red chili
1 tbsp Smoked paprika or Pimenton de la Vera
1 Lemon juice
Olive oil
Salt 

Method:


Firstly, make some cuts to the chicken with the paring knife and until you reach the bones, to allow the meat to marinade nicely.

Marinate:

It is as simple as adding all the ingredients into a food processor and blending them. You should wash previously the herbs and dry them before adding them. You can add more oil or use another type of oil of your taste. Also, you can adjust the spices with more garlic or more chili or more paprika or salt, just play with them and taste it before.




Add the chicken pieces into a big bowl and the marinade. Cover with a cling film and marinate it in the fridge for 2 or 3 hours or overnight ideally. 




To cook I used an oven tray to lay the chicken with the rest of the marinade left on the bowl and cook in the oven at 180ºC (fan) until crispy (it can take 45minutes or more). You will know when it is cooked when the skin separates from the bones by itself.



Tips:
👉I served it with spiced rice (which is made with turmeric, paprika, long rice, chili, and frozen peas) a simple salad, and some chopped spring onion.
