 Courgette soup with Microgerms topping



At home when I start to cook soups for my family the one I can't stop doing is the courgette soup. It is one of our favorites for its simplicity and yet it is healthy and very versatile as it goes well with fun toppings.

I usually finish it with some drops of a good Virgin olive oil, Maldon salt, and grounded pepper and a splash of single cream or cream fresh if I have it. Croutons or small bacon cubes are also very fancy, although this time I just wanted to try it with a delicate finish adding Microgerms and Iberico Ham cubes.

Here is the recipe.

What you will need?

✅1 food processor

✅1 chef knife and a chopping board


Ingredients:

✔ 3 medium courgettes

✔1 leek

✔1 medium onion

✔1 garlic

✔500ml vegetable stock (you can use the cubes)

✔20g Butter 🧈

✔Iberic ham finely chopped

✔40ml single cream

✔Hot & peppery microgreens

✔Salt and pepper

Method:

Wash all the courgettes and the leeks, once dry peel some courgette peel but leave some as it is going to give more greener color to the soup.

With this recipe, a food processor is going to make the whole process so easy. 

In the case you have one the recipe is as follows:

Introduce the onion, garlic, and the leek into the food processor and use the pulse button to chop the ingredients. Add butter and sauté for about 1.5 min with high heat. Then add the courgettes cut in medium pieces, the stock, and some salt and pepper. Use the cooking method of your food processor and cook at medium-high temperature for about 20minutes. Once finish add the single cream and blend it all together until smooth and shiny. Taste and adjust with salt if necessary.



The method with a saucepan:

Firstly chop the onion, the leek, and the garlic and sauté it with the butter. Then add the chopped courgettes, some salt, and stir. Pour the vegetable stock (better add it pretty hot) Let it cook for about 20minuts with the lid on until all is tender. Taste and season if necessary. Blend at full power with a hand blender until you see it's very smooth. 

To finish the soup I added a spoon of single cream on each bowl, some peppery microgreens, and small cubes of Iberico ham.
