Best homemade chicken broth
A good homemade broth comforts anyone at any time and it's also a versatile recipe that deserves a special place in your kitchen. You can just drink it hot in a glass or bowl adding freshly grated parmesan cheese or use it as a basic soup for making risotto, a paella, a stew, and many more recipes.
This way of preparing the broth is the best ever as roasting some chicken previously gives it another dimension and intensifies the flavors.
The best is that you can do it at home, prepare it in advance and keep it in your fridge or freeze it, the recipe is so easy too!!
What do you need:
✅1 stockpot 5l or a pressure cooker of 5l capacity
✅1 chef knife
✅1 paring knife
✅1 chopping board
Ingredients:
✔ 1 leek
✔ 2 carrots
✔ 2 potatoes
✔ 1/2 green cabbage
✔ 1 onion
✔ 2 chicken legs with thighs
✔ A few chicken wings (6 or 8 pieces)
✔ 4-5 l of water
Method:
Clean well all the vegetables, peel them and cut them into pieces of 10cm approx. Meanwhile, roast the chicken legs and thighs and the chicken wings in the oven at 180°C for about 25min just to turn them brown.
Once the chicken is cooked, we add the vegetables, then the roasted chicken into the stockpot or a pressure cooker.
If you are using a stock pot the cooking time will be approximately 2 hours, if you have a pressure cooker then the cooking time will be at maximum power for 10-15 minutes.
➡️When starts to boil it's important to remove the impurities, then we can close the lid and continue to cook.
➡️Let it cool down, strain it, and cook again for 20min to concentrate the broth. Once it's cooled down you can preserve it into jars with lids. You can keep it in your fridge for 3 or 4 days and in the case, you will freeze it can be stored for 6 months.
➡️ Use the rest of the chicken to make croquetas and the vegetables to make a soup with small pasta.
