Zucchini Bread
ZUCCHINI BREAD
Another great combination of sweet and sour with zucchini, sugar, egg, plain flour, topped with some nuts and cinnamon.
I love the fact that once cooked the zucchini flavors are not appreciable and instead you get a soft bread with a nutty aroma and crunchiness.
I am sure you will love this recipe, is healthy and full of vitamins and potassium, and yet is ideal at any time of the day, at breakfast, as a nice dessert, or as a quick snack too.
The original recipe comes from America in the 18th century when housewives discovered the pearlash chemical levain, so has a big history behind and now you can find it at coffee shops all over in the USA.

What do you need?
✅1 Box grater or an extra course size grater
✅2 medium bowls, 1 small bowl
✅1 fine-mesh sieve or a cheesecloth
✅1 loaf tin (I used a 31x13cm from #falconenamelware)
✅1 measuring spoon (mine is from #borughkitchen)
✅1 whisk
Ingredients
✔2 medium grated zucchini
✔1 large free-range egg
✔ plain flour
✔1 tsp baking powder
✔1 tsp soda powder
✔ tsp ground cinnamon
✔2 tsp liquid vanilla extract
✔180g brown sugar
✔120ml coconut oil or vegetable oil
✔1 pinch of salt
✔50g chopped nuts (I used an already mix nut with almonds, hazelnuts, pecans)
✔50g chopped dried cranberries
Method
- Start grating the zucchinis with your grater, preferably with a large or medium size coarse. If you clean them well enough, you can use them with the skin on. Once done put them on the sieve with a bowl underneath to extract all the water from them, squeeze them a bit with your hands too!
- Set your oven at 180º C and prepare your bread tin, spreading some butter and dusting it with a bit of flour.
- Next, add the dry ingredients into another bowl. Starting first with the flour, use a small fine sieve to pass the flour. Then add the baking powder, the soda powder, the cinnamon, and a pinch of salt.
- Now whisk the egg in another bowl, add the coconut oil and the vanilla extract and whisk again. Then add the sugar. Add all this mix into the dry ingredients bowl and combine well.
- To do this you don't really need a stand mixer or a kitchen robot, use your hands and a good whisk or spatula.
- Finally, you just have to chop the nuts and the cranberries at your size taste.
- Add all the mix into the tin and bake for about 45 minutes at 180º fan. Check before the time is finished and cover the tin with kitchen foil if necessary, so it doesn't get burnt.
- When is done let it cool in a rack. After 15 minutes approximately you can remove it from the tin.
