Teriyaki salmon with zucchini noodles
TERIYAKI SALMON WITH ZUCCHINI NOODLES
I love salmon and when I tried it with the Japanese teriyaki tangy sticky sauce I fell in love, and I include my family members too!
This recipe is so easy, is quick, and is full of intense flavors thanks to the ginger, the soy sauce, the garlic, and the syrup.
The dish is usually served with some noodles or rice. This time I wanted to find something much lighter instead and I discovered that zucchini noodles are just perfect!!
Let's see the recipe.
What do you need?
✅ 2 frying pans
✅ 1 spiralizer or vegetable slicer or julienne peeler or mandoline
✅ 1 bowl to use in the microwave
Ingredients (for 2 people)
✔ 2 salmon fillets
✔ 1 lime, zest, and juice
✔ 1 half chili
✔ 1 garlic clove
✔ 1 portion of ginger
✔ 4 tbsp soy sauce
✔ 2 tbsp maple syrup
✔ 2 zucchini
Method
- Get set your knife and your cutting board and finely chop the garlic and the chili. Peel the ginger and do the same.
- Add oil to a frying pan and when is very hot you can start to fry the garlic, ginger, and chili.
- Add the zest and the lime juices to the pan. Then add the soy and the maple syrup, let it cook for 2 or 3 minutes. Set the pan aside for later.
- Meanwhile prepare the zucchini, clean and cut the ends, and use your spiralizer if you have to make nice noodles. In the case you don't have it, you can also use a julienne peeler or a mandoline or slicer.

- Put it all in a container that can go to the microwave and cook it for 1 and half minutes only so they are a bit crunchy.
- Prepare another pan and add some oil. When it is hot enough cook the salmon with the skin on the pan for about 3 minutes, turn it on the other side, and cook for 2 more minutes.
- To finish the dish, turn the hob of the teriyaki sauce on and add the salmon, pour some sauce on top of the salmon, and put it into your serving plate.
- Do the same with the zucchini noodles, add them to the sauce to marinate them.
- Take a small amount of zucchini with a fork to form a small ball and serve it into the plate with the salmon. Pour some sauce on top too.
