Baby octopus in caramelized onion



Octopus, a beautiful and intelligent sea creature, can be a delicious meal. In Spain, it is quite common to eat octopus at the Galician way, 'a feira', which is normally a big octopus piece, tenderized and then boiled in water. But here I want to show you another way to cook it, yet this recipe is using a baby octopus which is more tender and it is very similar to the squid.
 
In this recipe, the octopus is deliciously cooked in a bed of caramelized onion. 

What do you need?

✅ 1 big saute pan ( I used a 32cm #castey saute pan) 
✅ 1 frying pan (I used #gastrolux 26cm saute pan)
✅ 1 colander

Ingredients

✔1kg baby octopus
✔4 medium onions
✔3 garlic cloves
✔2 ripped tomatoes
✔1 tbsp tomato paste
✔1 sliced chili 
✔1 tsp pimentón
✔2 bay leaves 
✔1 glass of white wine
✔300ml water
✔ Olive oil

Method

  • Heat some olive oil in a big saute pan, add the garlic, then the onions, and stir.

    • After 10 minutes, when it is soft and caramelized add the chili, the bay leaves, then the grated tomato, this way we take only the tomato flesh and discard the tomato peel, the tomato paste, and stir.

  • Add the pimentón and quickly the wine and then the water.

  • In a separate pan stir-fry the baby octopus.

  • Add them to the onion sofrito pan and cook at medium temperature.

  • Cook for about 20 minutes, taste, and season with salt and pepper if necessary.




 The result of this recipe should be a tender and tasty octopus.
