Peruvian Ceviche
Peruvian Ceviche, a national dish in Peru and also famous in all Latin America is a delicious meal with just 3 main ingredients which are, fresh fish or seafood combined with lime and chili, that will cook the raw fish with its lime juices. Adding fresh coriander, red onion, and some sweet potato will enhance the dish.
I would like to share a recipe that comes from my beloved friend Connie @connie who is from El Salvador and I met in London a few years ago. She made for my family, in one of her fantastic barbeques, an amazing Ceviche that will stay with me forever.
What do you need?

Ingredients (for 4 people)
✔ 4 Haddock loins
✔ 2 squeezed limes
✔ 1/2 garlic clove
✔ A piece of grated ginger
✔ A pinch of salt
✔ 2-3 tbsp mayonnaise
✔ 2 tbsp 'Ají Rocoto' paste (or rocoto pepper, which it is a specialty from Perú)
✔ 1 red onion very thin sliced
✔ 1 bunch of chopped Cilantro
✔ 1 baked sweet potato (to serve)

Method
- To start with the recipe we will prepare the 'Leche de Tigre' which is a liquid mixture of limes, ají chili, ginger, and mayonnaise, that will cook the raw fish mainly with the acid of the lime juices.
- Add the limes juice with the ají Rocoto chili, grated ginger, garlic, mayonnaise, and a pinch of salt, and mix it with your blender until you have a yellowish paste. Taste and add more limes, mayonnaise, or chili if you wish, to your taste.
- Cut the haddock into small squares that can be eaten easily as if you will eat sashimi. Mix the fish with the Leche de Tigre and keep it in the fridge for about 15 - 20 minutes.
- Cut the red onion into thin slices and chop the coriander too.
- To finish preparing a long dish to display all the ingredients nicely, first the haddock with the Leche de Tigre juices, add the red onion, and the coriander. Serve always with the sweet potato cut into small pieces on the same plate or on a side plate.

- You can do ceviche with other fish and seafood like king prawns, kingfish, sea bass, halibut, there are plenty of options to use!
