It's crunchy, it's moist, it's airy and it's fun!! This Italian savory flatbread has a long history behind it, coming probably from the Roman Empire.
Can be considered as a white pizza, yet focaccia needs to rise for some time and be flattened into an oven tray with loads of oil and some aromatics.
Now it has become an Instagram trend as a #focacciagarden which makes it so much fun!!
I love the fact that that you can combine the art of making a sort of bread and decorate it with your hands with simple herbs and savory food.
Here is my recipe version.
What do you need?
✅2 medium bowls
✅1 rectangular oven tray
Ingredients:
✔ 500gr strong flour
✔ 7g fast yeast
✔ 5 tbsp olive oil
✔ 2 tsp fine cooking salt
✔ 1 tbsp salt Maldon
✔ Rosemary, cherry tomatoes, kalamata olives, pecorino cheese
Method:
- You start mixing the flour with the yeast, 350ml lukewarm water, olive oil, and fine salt.
- Then it's time to knead the dough for about 10 min.

- Cover to prove for 30-40minutes till it doubles the size.
- Set your oven at 200°C and add some oil to a rectangular oven tray.
- The fun part it's now when you can add some herbs 🌿, like rosemary, salt Maldon flakes, olives, and even some cheese 🧀.
- Firstly mark the focaccia dough with your fingers and then add the ingredients on top.
- Cook in the oven for about 30 minutes at 200°C till it gets golden and crispy on top.
