Probably my mum's favorite cake.
A very traditional Spanish cake, typical from Galicia, the North-Western Spanish region, that you can recognize when you will see the decoration of Sant James Cross on top of an icing sugar almond tart.
Almond, sugar, and eggs are the 3 main ingredients to make it. The recipe is again so simple and it has a moist finish and a citrus flavor.
Just mix the ingredients and in 10 minutes you will be ready to bake it!
To finish the tart you will have to print or draw (if you are more experienced than me) the Sant James Cross. For this occasion, I used a printable one from @pinterest
What do you need?

✅ A printable Sant James Cross- Cruz de Santiago for decoration
Ingredients
✔ 6 eggs
✔ 255g sugar
✔ 260g ground almond
✔ Orange zest
✔ 1tsp almond extract
✔ 1tsp ground cinnamon
✔ Icing sugar (to dust)
Method
Set your oven at 180º C and grease the baking tin with butter.
Reserve 50g of sugar and beat or blanch the egg yolk with the rest of the sugar and the orange zest.
Add the ground almond, cinnamon, and almond extract and mix again.
In a separate bowl beat the egg whites with the 50g of sugar that you kept at the beginning until stiff.
Then you gradually add the whites to the almond mixture until it is well integrated.
It will take a bit of time but this is to make the tart moist.
Pour the mixture into the baking tin and bake for about 40 minutes. After 30 minutes have passed test your tart with a tart tester or a long stainless steel skewer. If you see the top already brown, but not the tart, you can use a kitchen foil to cover the tart and continue to cook for about 10 more minutes.
Let it cool completely.
Sprinkle with icing sugar and very carefully remove the Cross. You will see how beautiful it looks.
